Peanut Butter Banana Overnight Oats (E)

Ingredients:

1/3 cup rolled oats
1/3 cup + 1tbsp unsweetened almond milk 
1/4 cup nonfat plain Greek yogurt
2 tbsp peanut butter powder
2 tbsp gentle sweet
1/2 tsp peanut butter extract (optional)
pinch of salt 

sliced banana

a few peanuts

Directions:

1. Add rolled oats, unsweetened almond milk, Greek yogurt, peanut butter powder, gentle sweet, peanut butter extract, and salt to a mason jar. Mix well.

2. Top with sliced banana and a few peanuts. Store in the fridge overnight for a quick on-the-go breakfast.

White Chocolate London Fog (S)

Ingredients:

2 Earl Gray tea bags

2 oz hot water

2 tbsp on plan white chocolate chips

2 tsp coconut oil

1-1 1/2 tbsp Gentle Sweet

8 oz unsweetened almond milk

1 tbsp heavy cream

Directions:

1. Pour hot water over Earl Gray tea bags. Steep 5 minutes.

2. In a separate mug add on plan white chocolate chips and coconut oil microwave 30 seconds to melt (or melt on stovetop). Mix well to create a white chocolate sauce.

3. Steam almond milk and heavy cream with a steam wand. (alternatives to this in recipe notes)

4. Add steeped tea and Gentle Sweet to white chocolate sauce mix very well. Swirl in steamed milk and heavy cream. Enjoy!

Recipe notes:

*You can totally make this drink without a steam wand on an espresso machine! Before I had mine, I would heat up my milk, add it to my French press and pump about 10 times. Beware, this is messy! You could also heat up your milk on a stovetop and whisk vigorously for a similar result. 

Salmon/Chicken nuggets (S)

Ingredients:

5 oz pouch salmon

5oz pouch chicken

1 egg

4Tbsp mozzarella cheese

Directions:

1. Add all ingredients to food processor. Process until well combined.

2. Shape into nuggets and bake at 400°F for 22 minutes.

Recipe notes:

*Since these nuggets are half salmon and half chicken, they are perfect for those who may not prefer salmon, but would like to introduce it into their diet for its health benefits.

*Great for toddlers and adults too!

Lemon Blueberry Jam Oatmeal (E)

Ingredients:

1/3 cup steel cut oats

2/3 cup water (or more)

2 Tbsp Gentle Sweet or other on plan sweetener

1/3 cup blueberries (frozen or fresh)

Juice from half a lemon 

About 1/4 tsp lemon zest

Directions:

1. Optional: soak steel cut oats in water the day before. I highly recommend this to improve texture and significantly reduce cooking time.

2. When ready to cook add Gentle Sweet, blueberries, lemon juice, and lemon zest to the pot with the oats and water.

3. Cook on medium-high until tender. If your oats are soaked this will take 5-10 minutes, if you did not soak this could take 20-30 minutes, add more water as needed.

4. Take off the heat. Stir in 0% Greek yogurt. Enjoy that vibrant color!

Chocolate Raspberry overnight oats (E)

Ingredients:

1/3 cup old fashion oats
1/3 cup + 1 Tbsp unsweetened almond milk
1 Tbsp cocoa powder
1/2 Tbsp super sweet (or another on plan sweetener)
1/4 cup frozen raspberries
pinch of salt 
About 10 on plan chocolate chips (keeping to this amount keeps you in E mode)

Directions: 

1. Add all ingredients to a jar, shake to mix. Store in the refrigerator overnight to enjoy a quick on-the-go breakfast in the morning.
